Flowers from Rain, Beauty from Pain

I guess Arizona heard that I'm missing Iowa, and decided to give me a taste of what Iowa has gotten in the past week.

What our parking lot looks like after it's rained several days in a row. Thankfully our spot has been dry so far!

Yes, Arizona does get rain - it just doesn't know what to do with it!

Curtis and I were going for a walk when we found this tree fallen over outside of our apartment complex. We had no idea the winds were that strong! If there ever was a tornado or straight line winds like what Iowa just had, I don't think they have sirens or a way of letting anyone know. It doesn't matter, we don't have basements anyway. :p

It's not fair, we only have like 1 tree for every 200 that Iowa has, and they don't even give much shade! Why do we have to lose our precious trees?!

Welp, I guess we're not going through that gate anytime soon!

Storm clouds - I see them a lot, but that doesn't mean we get rain every time. The first day that it rained, Curtis and I happened to be at the puppy store, and ended up walking home in a downpour. It was so much fun. :)

Rain likes to hover over mountains. That's Wasson peak on the right.

Beauty in the desert. Isaiah 43:18-19 come to mind. "Forget the former things, do not dwell on the past. See, I am doing a new thing! Now it springs up; do you not perceive it? I am making a way in the desert and streams in the wasteland." No matter were you are in life or what is going on, God is at work, creating beauty from pain, flowers growing after the rain. Don't spend your time thinking about the past and what once was, instead focus on the here and now and look for ways that God is working around you.

I've stayed busy carving stamps this week. I'll post some pictures when I have more done. I was so nervous about getting started on these more challenging carves, but now that it's going so well I can't stop! Yesterday, I was able to go to school with Curtis for "take your wife to school day" and we had a fun lunch date. Today, he worked from home. We are so blessed with all this time together.

The Way to My Husband's Heart

Today's reflection on marriage is about another big thing that wasn't really a big part of my life before getting married, and now is something that goes on daily: cooking! Before getting married, I knew the basics, thanks to my wonderful mother who homeschooled me and used cooking and cleaning in the kitchen as an elective in high school. (Homeschooling is fun like that!) But there's no way I could've grasped how much bigger of a job it is to be a housewife, in charge of my own kitchen. First off, I'll just say it's given me a much greater appreciation of all the cooking my mom did for me and my siblings, along with teaching us, driving us around, cleaning,…on and on the list goes!

How did I start out? With what I know and love the most - spaghetti! Featuring my mother's homemade alfredo sauce.

It started with walking into our apartment for the first time, and after moving past the initial "we're on our own, in our own home!" excitement, I realized how much work and responsibility came with that. All we had to start with in the kitchen were about 5 different seasonings that Curtis happened to have, and an ice tray. The first thing I did was make a dozen ice cubes just so that it wouldn't be so "empty." We had to do so many grocery runs that first week because there always seemed to be something I was forgetting. I quickly figured out that thorough meal planning before shopping was completely necessary, and over time I've gotten better at that. I'm definitely not a master at it!

Once I had gone through the "basics," it was time to start learning new things. Chicken parmesan with avocado was one of my first original meals.

The food you eat isn't something you'd normally think about discussing before getting married, but after getting married it suddenly becomes a big deal. When 2 become 1, you're combining 2 people who have grown up eating foods typically made by their mother, and even the same foods can have distinctly different taste or style. Therefore, both may have completely different expectations of what meals should consist of, when and where they should be, and how often they should happen. I had been living at home where my mom made most of the meals, while Curtis had been living on his own for the past 2 years and he had been living off of canned soup and had Domino's pizza twice a week. The best thing to do in this situation is to remember that we are our own new family now, and we could define meals however we wanted!

Our favorite comfort food - corn casserole - with sweet potato fries, a favorite healthy snack

When I started cooking, my biggest struggle was knowing how much to make. Going from a family of 8 to 2 was quite a challenge! I also had an interest in healthy eating. I had done the Paleo diet before, but I thought I'd have a happier husband if I made him desserts. (I was right!) I've educated myself to know what's healthy and what to avoid, and lately I've gotten better at making more and more things from scratch. I'm thankful for Pinterest and the numerous recipes I got from my mom and grandmas that helped to get me started.

One of our favorite meals is stir fry - when I take any meat we have, leftover or otherwise, throw it in the wok with a variety of vegetables that we need to use, throw in some seasonings and tada! A simple, flavorful, well-rounded delicious meal!

The first time we went grocery shopping together, I expressed my interest in wanting to eat healthy to Curtis. He said it was a great idea and went right for the rice cakes. What? Rice cakes? My dear mother taught me to stay away from those! Since he was so excited about his rice cakes, I let him get them, but told him that what I really meant was fruits and veggies. He was much less keen on that idea, but he always ate everything I made and told me that I was doing a great job. Just 6 months after that shopping trip, we were back shopping for groceries at the beginning of April, and I told Curtis that he could pick out whatever he wanted, no matter how unhealthy, because it was his birthday month. "No, that's okay," he said, "I really like the way you cook." Awwww! Those words made my heart happy - I've finally found a way to cook that works for us!

Who doesn't love breakfast for dinner? Breakfast IS the most important meal of the day ;) We love omelets stuffed with whatever that is in the fridge that sounds good!

One of the greatest things we've found that has encouraged fresh and healthy eating is Bountiful Baskets. Bountiful Baskets is a co-op that operates by contributions. Every other week, we "contribute" $15 and get a laundry basket full of fresh fruits and veggies that are well worth the price. I never know what's coming when I contribute, so that makes it kind of a guessing game, but I really enjoy figuring out how to best utilize everything we get and make it last as long as it can, until we get our next basket. I've also gotten some veggies that I had either never heard of or had never used before, and learning how to use new things has been a fun challenge. By doing this, we have new fresh food in our home every other week, and we only have to go to the grocery store once a month to get meat and anything else we might need stocked up on.

One week's bounty from Bountiful Baskets.

Oh, and then there's dessert…. but I already wrote how we feel about that in my cheesecake post. ;)

So Far From Home

This past week, home has just felt so much farther away. There have been storms, damage, and loss of wonderful people back in my hometown. It makes me want to be closer to my family, and long for the day Jesus comes back, when there will be no more sorrow.

Romans 12:15 says "Rejoice with those who rejoice, and mourn with those who mourn."

Jeff & Lydia, (Curtis' sister and her husband) on their 3 week anniversary at our wedding

Today, we're rejoicing with Lydia and Jeff as they celebrate their 1st anniversary. Congrats to this beautiful couple, we can't wait to see you this week & live closer together for this year!

Praying for this wonderful family as Ryan, first on the right, went home to be with Jesus today.

Just over a month ago, Curtis and I were at home, rejoicing with friends as they said their vows and professed their love, promising to spend forever together. Today, we are mourning from afar as my dear friend's new husband passed away. I'm heartbroken over all they've gone through. I don't understand why a wonderful, godly young couple has to go through something like this. We pray, and we cry out to God, it doesn't seem like enough but it's all we can do. He has a plan for all of this, but it's so hard to imagine what that could be right now.

Some may wonder, how could I trust in a God that causes these things to happen? To that, I say, how could I not? Right now, what we need most is to have that comfort of knowing that He will be with us always, and He will give us peace. There is more to life than this world here and now - in fact, there is an eternity of being in the presence of Jesus after this. That hope can carry us through every trial we're given on earth.

We serve an all-powerful, all-knowing God, who has had every moment of our lives planned out from the beginning of time, before the earth existed. I trust that everything He does serves a greater purpose, one we cannot understand now. He has the power to give or take away, to heal or to bring home to be with him. I sit here, 1600 miles away from my family, and when the storms are raging back at home, all I can do is trust in my all-powerful God to keep them safe until we can be together again.

I miss you all back in Iowa and wish I could be there with you. For now, I'll be praying continuously for you all. We're always looking forward to our next visit, and of course that glorious reunion that will happen when we all are in heaven together. I love you all!

Simple Pleasures

It's late and we're exhausted after a fun day, (yes 10 is late, we are that old married couple) but I still wanted to share what I'm thankful for today.

I'm thankful for a wonderful husband who works hard at everything he does, even if it's washing the dishes. I always wanted to have a husband that washes dishes. :)

I'm thankful for the walks we take together around our "neighborhood" to pick up groceries and see puppies.

I'm thankful for my amazing parents, who are celebrating their 299th wedding monthiversary. That means in a month, it'll be their 25th. I think they're pretty great and I'm proud to be their daughter.

My mom sent me this picture, and I wanted to share it cause I think they're so cute together!

I'm thankful for a warm and cozy apartment - with working air conditioning! - that keeps us safe & dry from the monsoons.

Looking outside our front door - torrential downpour going on outside!

I'm thankful for our close group of friends and the fellowship we share. It's good to get some "girl time"!

I'm thankful for people who read & support my blogging. (Shout out to my family & Kathy - You guys are the best! :))

The beautifully decorated whiteboard in my kitchen, with fresh doodles from tonight!

We had a great night with friends, eating pizza and playing Risk and Diplomacy. Well, the guys played, us girls "supported." And drew pictures of our men from memory (scattered around the whiteboard in the above picture). I think it's pretty spot-on! ;)

Psalm 118:24 "This is the day the Lord has made, let us rejoice and be glad in it."
Happy Saturday, everyone. :)
